Classic Banana Pudding

 

This banana pudding recipe comes from my grandma, who adapted it from a classic vanilla wafer box recipe. She passed it down to my mom, who would often make it for family picnics and barbecues. It’s a beloved dessert that brings back wonderful memories!

Banana Pudding Recipe

Ingredients:

  • 2 cups milk

  • 1 cup granulated sugar, divided

  • 1/3 cup all-purpose flour

  • 1 pinch salt

  • 1 teaspoon vanilla paste

  • 3 large egg yolks

  • 1 box vanilla wafers

  • 3-4 ripe bananas, sliced

Instructions

  1. Prepare the Milk Mixture: In a medium saucepan, combine the milk and 1 cup of granulated sugar. Cook over medium heat, stirring frequently, until small bubbles start to form around the edges.

  2. Mix Dry Ingredients: In a mixing bowl, whisk together the flour, remaining 1/3 cup of sugar, and a pinch of salt.

  3. Combine Yolks and Dry Ingredients: Add the egg yolks to the dry ingredients and whisk until smooth and well combined.

  4. Temper the Yolks: Slowly pour a small amount of the hot milk mixture into the egg yolk mixture, whisking constantly to prevent the eggs from scrambling. Gradually add more of the hot milk until fully combined.

  5. Thicken the Pudding: Pour the tempered egg mixture back into the saucepan with the remaining milk. Continue to cook over medium heat for about 2 minutes, stirring constantly until the mixture thickens.

  6. Cool the Pudding: Remove from heat and cool the pudding in an ice bath or in the refrigerator. Once cool, stir in the vanilla paste.

  7. Layer the Pudding: In a serving bowl or individual mason jars, start by spreading a thin layer of pudding on the bottom. Add a layer of vanilla wafers, followed by a layer of sliced bananas. Repeat the layers until all ingredients are used, finishing with a layer of pudding on top.

  8. Chill: Place the assembled pudding in the refrigerator until fully set.

Serve & Enjoy:

Top with whipped cream, Cool Whip, or meringue before serving. Enjoy!
