Grandma Karen's Biscuits & Gravy
There's nothing quite like a comforting bowl of flaky biscuits smothered in rich sausage gravy. This classic dish is perfect for breakfast or brunch, and has been in my family for generations. Here’s how to make both the biscuits and the gravy from scratch!
Flaky Biscuits Recipe
Ingredients:
3 cups all-purpose flour
3 tablespoons baking powder
2 teaspoons sugar
1 teaspoon salt
8 tablespoons frozen unsalted butter, cut into pieces
1 ½ cups milk, plus more for brushing
Instructions:
Mix Dry Ingredients: In a large bowl, combine the flour, baking powder, sugar, and salt.
Cut in the Butter: Add the frozen butter pieces to the bowl. Using a plastic bench scraper, pastry cutter, or two knives, cut in the butter until the mixture resembles coarse crumbs.
Add Milk: Gradually stir in the milk until the dough starts to come together.
Pat and Fold the Dough: Turn the dough out onto a floured surface. Using your hands, pat the dough into a rough rectangle about 1 ¾ inches thick. Fold the dough in half, give it a quarter turn, and pat it out again to the same thickness. Repeat this folding and patting process one more time.
Cut the Biscuits: Using a chef's knife, cut the dough rectangle lengthwise in half, then cut crosswise into 10 roughly equal pieces.
Chill the Biscuits: Arrange the biscuits well apart on a baking sheet and refrigerate for 30 minutes. Meanwhile, preheat your oven to 450°F (232°C).
Brush and Bake: Lightly brush the tops of the biscuits with milk. Bake until golden brown, about 10-15 minutes. Serve warm with sausage gravy.
Sausage Gravy Recipe
Ingredients:
3 tablespoons grapeseed oil
1 pound ground sausage meat
Salt, black pepper, and Aleppo pepper, to taste
1/3 cup all-purpose flour
3-4 cups milk, depending on pan size
Minced sage and thyme to taste (optional)
Instructions:
Cook the Sausage: In a cast-iron skillet or other heavy-bottomed frying pan, warm the grapeseed oil over medium heat. Add the ground sausage and cook, breaking it up with a wooden spoon, until fully cooked, about 5 minutes. Season with salt, black pepper, and Aleppo pepper to taste.
Add Flour: Reduce the heat to medium-low. Stir in the flour and cook until the sausage is lightly browned, about 4 minutes.
Incorporate Milk: Increase the heat to medium-high and gradually add the milk. Cook, stirring continuously, until the gravy thickens, about 5 minutes.
Simmer: Reduce the heat to medium-low and simmer for an additional 5 minutes, stirring occasionally. Taste and adjust the seasonings, adding fresh herbs if desired.
Serve and Enjoy!
